Castle MacLellan in Dumfries and Galloway has produced a range of luxury pates for over 30 years. For Christmas there’s a limited edition seasonal selection of five different varieties to help your festive entertaining. Try the new duck liver pate with apple jelly and splash of port for a sophisticated canapé. You can also use the pates to create other savoury dishes such as chunky smoked salmon and haddock chowder. Combine salmon pâté with fish stock and cream. Add diced cooked potatoes and small cubes of undyed smoked haddock. Simmer until the haddock is cooked and sprinkle with chopped chives or parsley.
