Chefs are often unsung kitchen heroes who speak about their craft and ingredients with a knowledge and passion that raises their work to a skill – an art form. While I shall never attain their culinary mastery, this new Relish Scotland cookbook at least allows a further insight into their world and reveals some of our leading chef’s signature dishes. The selection of restaurants and hotels are from the Scottish Borders to Skye. It’s attractively illustrated with each location, chefs and tempting dishes. Reader, I marinated it. Inspired by these chef’s recipes, I created with artistic style, Watercress soup with home made gnocchi, and Kedgeree risotto with poached quail’s egg – and according to my friends, the results were good.
