In wooded parkland just outside Kelso in the Scottish Borders is the Roxburghe Hotel. Perfect for a rural retreat and to enjoy the nearby wild rocky coast, sandy beaches, Floors Castle or its own magnificent golf course. The Roxburghe sporting estate offers grouse shooting – from the glorious 12 August – horse-riding and salmon fishing on the Tweed. The bedrooms and suites of this classic Victorian ivy-clad mansion have recently been redesigned in contemporary style with subtle, soft colours. Relax in the homely drawing room with comfy sofas and roaring fire, while the wood-panelled library Teviot Bar is perfect for lunch and pre-dinner drinks.
The dining room is an intimate setting for a taste of neo-classical cuisine which highlights seasonal Scottish produce such as venison, beef, trout, Eyemouth lemon sole, garden peas, berries, apples, pears and Stichill farm cream and cheese. Home-baked foccacia bread, foraged wood sorrel and wild garlic add to the feast.
Head chef Neville Merrin is launching an occasional Tasting Menu, offered with paired wines. A recent sneak preview of his seven-course dinner can only be described as a superlative gastronomic feast, each exquisite dish artistically presented and created with imagination and passion. With this newly improved, high standard of refined wining and dining, the Roxburghe will soon be renowned not just by golfers, anglers and grouse shooters, but as a key destination to visit on the foodies’ map of Scotland.
