Pickerings gin is handcrafted at Summerhall and is the first exclusive gin distillery to be established in Edinburgh for over 150 years. Based on an original Bombay recipe, kept secret since 1947, Pickering’s is a spectacularly smooth and flavoursome gin. Pickering’s gin is based on an original Bombay recipe, handwritten on a fragment of paper dated 17 July 1947. Kept as a family secret for over 66 years, it only resurfaced in 2013 when owners Matt and Marcus began distilling at Summerhall with the result of a spectacularly smooth, refreshing and flavoursome gin. You can buy Pickerings gin at selected retailers, but the best way to understand the real meaning of hand crafted is to go on a tour – see/touch the still – called Gert and realise all the labels are pasted on by hand and sealed with wax.
The secret of the gin’s smoothness is Gert’s ingenious, custom-designed bain marie heating system. This provides a gentle all-over-heat to the still. Thus the botanicals enjoy a luxurious simmer that coaxes out their subtle, soft, highly drinkable flavours.
. Summerhall Distillery is housed on the site of an old animal hospital. Part of a veterinary school known locally as the Dick Vet. Or it was. Now it’s an arts venue called Summerhall. With a pub in the middle of it. Called The Royal Dick. And Pickerings is next door.
Guided guided and tastings are by appointment Monday – Friday at 2pm and 4pm. Saturday tours are also available at 1pm, 2.30pm and 4pm. Book through the website.
