The next Slow Food Masterclass from Neil Forbes at Cafe St Honoré in Edinburgh will celebrate all things fishy. Using fish sourced from the East Coast fishing ports of Fraserburgh in Aberdeenshire and Scrabster in Caithness, Neil will demonstrate how to prepare everyone’s favourite comfort dish, fish pie. He will share his top kitchen secrets and techniques including filleting and the best ways to cook different types of fish and everyone will get the chance to taste a variety of seasonal fish.
Neil will be joined by Iain Campbell, managing director and great grandson of the founder of the specialist Perthshire fishmonger George Campbell & Sons, who have been supplying fish to the Scottish catering industry since 1872. To complement Neil’s demonstration, Iain will bring the most up-to-date fishing industry news, helping you to make an informed choice at the fish counter.
