A talented Italian chef will be adding his philosophy to the menus at Divino Enoteca, the wine-inspired oasis in Edinburgh’s old town.
The basis of Alessandro Grillo’s philosophy is that he will not contaminate food with dressings which distract from the original flavours. Each plate is designed to be completely balanced in flavours, as well as keeping the original nutritional values.
Alessandro, who brings 15 years of experience in prestigious restaurants throughout the Italian peninsula, has revisited traditional Italian dishes, adding his creative touch. So now homemade lasagne is teamed with mackerel and fresh basil and Scottish beef stew is served with artisan tortina flavoured with spinach and lemon.
