With grouse right in season, it’s certainly the obvious time to be including it in a Slow Food dinner. The RiverView restaurant the Atholl Arms Hotel overlooking the Tay in Dunkeld will be pan frying it and matching it with Stornoway black pudding and apple compote as one of the main courses of its monthly Slow Food event on 4 September.
The dinners, held on the first Thursday of each month are based on the Cittaslow method of cooking, using locally sourced and seasonal ingredients. “We keep things relaxed and informal and often have a speaker joining us from one of our suppliers. We can even tell guests the transit time on some of the food,” explains the hotel’s director of operations Alan Berwick. The RiverView restaurant was voted best in the region for informal dining at the 2014 Scottish Hotel Awards.
