Another new venue in Edinburgh is the Huxley, the latest enterprise from the Signature Pub Group. This laid-back style bar is in the same landmark building at the east end of Princes Street as Kyloe Restaurant & Grill. There is a eclectic choice of beers and cocktails to go with food inspired by American and British classics. Head chef David Haetzman said: “We have brought together a range of well-prepared dishes that are a little different from the norm, all made using high quality, locally sourced ingredients where possible. Inspired by our forays into the US, we have a range of gourmet hot dogs and chuck steak burgers. It’s good, honest food that we hope will keep our guests coming back for more.” The Huxley also offers small made-for-sharing plates like a scotch egg made with venison and black pudding and a sausage roll made with spicy lamb accompanied with BBQ beans.
