Handcrafted by Edinburgh Gin head distiller David Wilkinson in collaboration with four specially selected postgraduate students from Heriot-Watt’s MSc in Brewing and Distilling, our newest tipple has the unique flavour of summer at the beach.David and the team explored the Scottish coastline in search of the perfect indigenous ingredients for a distinctively Scottish seaside flavour. After extensive experimentation, they settled on a combination of seaweed, scurvy grass, ground ivy and gorse flowers to lend the gin a slightly sweet yet refreshingly minerally taste – perfect for mixing into G&Ts on long, hot afternoons or creating summer Seaside Martinis.
Currently, only 1000 70CL bottles of Edinburgh Seaside Gin have been produced below stairs at our Edinburgh Gin Distillery, where we’ll be selling them exclusively at our gift shop priced at £35.
